Being Vegan- Good for your Health, Good for the Planet

Hey! I recently read here a post about a veggie soup. It was prepared with zucchini and I was wondering: Can I prepare this at home with a bag of baby zucchini that I just bought. You'll see... I'm pretty much like you, I'm not a veggie fan and this is a nice way to consume the vitamins of the vegetables and disguise them (because I do like soup). Can I use those instead?
