Shrimp "Moqueca" A Brazilian Recipe that You'll Love

A few months ago some friends from Brazil visited me, this was about 6 months ago. They wanted to eat and go out every single day, but one day they said they were going to cook a special dish from their country to thank me for my hospitality. They wanted me to learn this very Brazilian recipe as well.
 
I was delighted and pampered. Without thinking about it twice I let them take control of my kitchen. When they started cooking, the smell was irresistible. I was hypnotized. 
 
My friend yelled from the kitchen: "The food is ready." I ran to take my place on the dinner table. I was 100% prepared to devour whatever appeared on my plate. As soon as I tasted it I was completely amazed, they conquered me. This is why I want to share this recipe. 
Ingredients: 
  • 2.2 pounds of shrimps (without the shells) 
  • 2 garlic cloves
  • 4 chopped tomatoes
  • 2 big onions (chop them in cubes) 
  • 1 green pepper (chopped) 
  • 12 branches (chopped) of coriander (cilantro) and mixed with the juice of 2 lemons
  • 4 tablespoons of coconut milk
  • 3 tablespoons of olive oil
  • 1 teaspoon of salt
  • White rice as a side dish
Preparation: 
  • Remove the shells of the shrimps and clean them very well. You can rinse them with water and lemon juice to make sure you kill everything. 
  • Smash the garlic cloves with half a tablespoon of salt and the coriander. Add this to the shrimps and let it rest in the fridge for a while. 
  • While you wait you can chop the tomatoes, the pepper, the onions, the garlic and the coriander branches. Then you can separate this into two equal parts. 
  • In a clay container (very typical in Latin American cuisine) add the shrimps with the coconut milk and take this to the fire. You need to constantly move with a wooden spoon until it boils. Then you can add one part of the veggies you chopped and let it cook for a bit longer. 
Once it's ready you can serve and delight yourself!
