Arepas the perfect breakfast to honor your heritage

Arepas are getting popular around the world and some are even starting to discover this tasty, crunchy and flavorful traditional dish (consumed in countries like Venezuela and Colombia for their common everyday breakfast).
 
The best thing of the arepa is that this little piece of cooked dough is so versatile, that you can have unlimited versions of one single dish. You can fill it with cheese, ham, veggies, sausages, frijoles, scrambled eggs, meat, and basically pretty much everything that you imagination and palate crave to fill them with. 
 
Preparing them it's easy, just buy pre-cooked cornflour (Harina P.A.N.) mix it with water (in equal proportions) and add a little bit of salt. Prepare small balls with the dough and flatten them to form your arepas. Then cook them on a pan with just a bit of oil, making sure they are brown and toasted on both sides. The point of this post is sharing my very favorite arepa filling... And good news just keep on coming, because we are preparing the healthy version of it (by replacing mayo with yogurt). In Venezuela we call this specific arepa the "Reina Pepiada" (dotted queen) because it was prepared for the very fist time to honor Susana Duijm, a beauty queen who won the Miss Venezuela (an important beauty pageant) while wearing a dotted dress. 


 
Ingredients:
  • 1 small avocado
  • 1 can of shredded chicken breast 
  • 2 tablespoons of unflavored greek yogurt
  • 1 teaspoon of mustard 
  • 1 chopped green onion
  • salt and pepper
Instruction: 
This part is pretty easy, you just need to mix all the ingredients inside a bowl (making sure that everything is evenly mixed) and voilá, you filling is ready to go inside your steamy arepa. You will be thanking me after you prepare it.

OMG! surprise
I just watched the "To be Miss" documentary on Netflix last night, so I know what Miss Venezuela means in Venezuelan culture! 
.
It was very interesting how the beauty pageant is a reflection of society. I originally came from Korea and I thought Korea is the number one cosmetic consuming country, so it was much surprising for me that Venezuela is actually the number one cosmetic consuming country per capita!  It is even more surprising and interesting that there is food associated with it! 
.
Are Venezuelan women still very much into Miss Venezuela? Or is it diminishing for younger generations?
According to the documentary, winning Miss Venezuela means changing a girl's life completely so that is the reason it is so important in Venezuela. But I am wondering- isn't there any other way for females to be what they want to be such as through education or successful in business? 
.
Anyway, the Arepa is awesome since I love corn tortillas and would love to try out this!  Thanks!:good:

It's great that you know about this. I want to see that documentary sounds very interesting. And yes, in fact people are obssessed with beauty in my country.

OMG! The Reina Pepiada is my favorite type of arepa!! I just love the combination of flavors. Thanks for naming the ingredients, now I can prepare them at home wink @MerceRojas
