Figs Marmalade, The Perfect Vegan Dessert!

I have a problem: I am a sweet-tooth! I have a problem, I love to eat sweets, candy, and desserts! Now that I'm trying to lose some weight and engage a healthier lifestyle I need to reinvent myself in order to prepare some dishes that are delicious, sweet and healthy. This way I discovered a figs marmalade that is delicious and became my latest delight for every single afternoon. 

I serve my home-made marmalade with black coffee (no milk or cream) and puff rice cakes. I buy the ones that are made out of whole rice grain because they have a lot more fiber and fewer calories. I seat and delight myself with this treat, even my boyfriend (who is not a big healthy food fan) loves it, so trust me with this recipe because if he likes it, you are going to love it! The very best part is that this recipe is very easy, so anyone can prepare it! You don't need to be a master chef. 



Ingredients: 
  • Figs (about 20) 
  • The juice of 1 lemon
  • Honey* (it depends on how much you want it to be sweet. I used about one tablespoon)  
  • Water
* NOTE: hard-core vegans who don't eat honey can replace it with agave nectar or some other honey substitute.

Fun fact: Did you know that figs are not actual fruits. They are flowers! Yes, they are inverted flowers and seeds that are pollinated by a species of tiny symbiotic wasps. 

Preparation: 
1. Wash the figs very well 
2. Cut them into small cubes (your cubes will not be perfect, but don't even worry. Figs, like tomatoes, are very hard to cut perfectly) 
3. In a pot place the figs, the lemon juice, a bit of water (less than 1/4 of glass) and the honey. 
4. Let this cook on a very low fire for a very long period of time. Every once in a while stir the fruit with a wooden spoon to avoid it sticks to the bottom of the pot. 
5. Once you see that the water is no longer present in the mix and that the figs turned a bit more burgundy, you are ready! 
6. Let it cool and fill a glass container with your marmalade. Keep it in the fridge.

Thanks for this recipe! I feel especially hungry during afternoons and of course, like you, I crave a little sweetness. This looks easy and very healthy!
