"Crema de calabacín" a very healthy way to eat your veggies

I must come clean: I'm not a veggie fan (at all). I know I need to eat them because they are awesome for our bodies, but there is something about them that I just can't handle... Especially when I cook them!
I started a diet with my boyfriend on Monday, and guess what? Yes... we need to eat tons of green and I'm in pain. But the good thing is that this time veggies are not going to defeat me because I discover a way to eat them and love them. That's why today I'm sharing my creamy soup recipe.
"Crema de calabacín" means zucchini cream (it's soup but it's a lot creamier, they are very popular as a starter dish here in Venezuela... Yes, we always eat soup first) and this is the perfect way for me to eat vegetables in a fun and delicious way.
Ingredients (4 about 10 portions. I prepare a lot and then I freeze the portions separately)
- 5-6 large zucchini
- 2 leeks
- Water
- Salt
- Pepper
- My secret ingredient: nutmeg
Preparation
- Chop your leek and zucchinis into cubes (or small pieces) and cook them for a while with just a little pinch of oil. After they are ready, add water (enough to fill the pot halfway) Put a lid on the pot and let the zucchinis cook.
- You will know the are ready once they are soft.
- Take all your zucchinis (including the water) and blend it all!
- Now you'll have a creamy texture.
- After you blend it, return it to the pot and add the salt, the pepper, and the nutmeg.
Voilá! This is what I'm having for lunch. A healthy and delicious dish.
